Is it cool or acceptable to invite the groom's mother to the wedding through verbal invitation only?

You should be getting a formal invite. It is VERY rude of the bride to not send you one. The mothers of the couple are usually the ones who keep the wedding invites and cherish them. I would speak to your son about this.
